There’s something about fall weather rolling in that makes me crave all things pumpkin. About once a month I treat my family to a big Sunday breakfast that includes pancakes or waffles.
This pumpkin waffle recipe was a huge hit, so I thought I’d share.
INGREDIENTS
3/4 cup Brown Sugar
3 tbsp Cornstarch
1 1/4 cup Flour
1 1/2 tsp Baking Powder
1/4 tsp Salt
3 tsp Cinnamon
1/2 tsp Ginger
1/4 tsp Cloves
1/4 tsp Nutmeg
2 Eggs
1 cup Milk
1 1/2 cup Pumpkin Puree
4 tbsp melted Butter
DIRECTIONS
Add all dry ingredients to bowl and whisk to mix well.
Separate eggs.
Add yolks, pumpkin, milk and butter to a large bowl and mix to blend.
Add pumpkin mixture to dry ingredients and mix until just combined.
In a separate bowl, whip egg whites until stiff peaks form.
Fold egg whites into batter.
Pour batter into heated and oiled waffle maker and bake following directions.
Served with whipped butter, pecans and maple syrup.

I have been wanting to make these waffles for a long time. All I need to get at the store is the Pumpkin Puree. These waffles look delicious and I am going to make these soon!

We just had pumpkin waffles the other day for breakfast and they where so could, I like sprinkling powder sugar on mine, quite a treat and great for a fall breakfast.

I don’t have a waffle iron/griddle thing. I have been wanted one for a while, and this just confirms that I need one ASAP. I am in love with pumpkin. Im going to try this batter for pancakes right now, and add a waffle maker to my xmas list 🙂
