It was about fifteen years ago my husband convinced me to switch from non-stick pots and pans to stainless steel. We purchased the best set we could afford… and I fell in love. I admit I had a smidgen of a hard time getting used to not being able to rely on a non-stick coating, but once I adjusted I swore I’d never go back. When I was given the opportunity to review Calphalon’s newest line, AccuCore, I couldn’t resist.

Then, I picked a pan up… and almost dropped it. I wasn’t ready for it to have such sustenance to it!
I’ve learned the hard way that having a quality pot or pan makes all the difference in the outcome of your meal. The ultimate goal is exceptionally even heating to ensures optimum cooking performance. Calphalon AccuCore Stainless Steel cookware is made from 5 individual metal layers with a responsive copper core that heats – and cools – evenly to help maintain a more consistent temperature across the entire pan. Two inner layers of aluminum also efficiently conduct heat, while the stainless steel outer layers create a beautiful, durable surface that is dishwasher safe. Stainless steel is an exceptionally versatile cooking surface, and is the best choice for high-temperature techniques such as searing and deglazing.
I am not a “fancy” cook by any means. My regular rotating dishes are probably on your monthly menu plan as well. That doesn’t mean I don’t want exceptionally even heating and high quality performance from my pots and pans. I was excited to use them to see what the chatter was about!
My first need for a pot was for rice. Like I said… not a “fancy” cook. Usually we end up having to scour the bottom of our old pan because a layer of rice has burned to it. We cooked it normally and during cleanup I put the leftover rice into a container to find that the bottom of the pan was not burned on. I couldn’t believe my eyes and had to show my husband. NOW I was really excited to try the rest of the pots and pans!
I’ve used most of the pieces to the set and I have to say that my rice experience was not a fluke. Our food is cooking more evenly… more of a controlled cook instead of a “waiting for it to heat up… oh shoot! it’s burned” routine. There hasn’t been a single burned food item and cleanup has been a breeze. Cooking our Thanksgiving meal in them was pure joy.
We are loving everything about AccuCore from the five layers for even heating, the long handles that stay cool on the stovetop, the fact that they are oven and broiler safe for when I want to make a morning egg casserole that goes from stove to oven, the covers are a good heavy tempered glass, you can use any/all utensils with them, they are recommended for gas, electric, halogen, ceramic and induction stove tops, they are dishwasher safe and they come with a full lifetime warranty. Yes, they are a little pricier than some but you definitely get what you pay for with these… and they are warranted for life!

I just bought the tri ply and didn’t know about the accu core I wonder how they compare.
I do wish that calphalon would list the bottom diameter of the pots as well as the frying pans. Induction cooktops have very specific size “burners” and it is frustrating to me to only know the capacity, not the diameter.
