Lemon Lentil Salad
- 1 lemon
- ½ tsp. Dijon mustard
- 2 tsp. honey
- ¼ cup olive oil
- 1 pinch salt & pepper
- 1 handful of parsley, chopped
- 1 19 oz. can lentils, rinsed and drained
- Add lemon juice, mustard, honey, salt & pepper in a small bowl. Whisk together until combined.
- Add the oil and whisk to mix everything together.
- Add lentils to a bowl and mix in parsley. Pour the dressing over top and stir to combine.
