With many of us focusing on a healthier version of ourselves for the New Year, we thought it would be good timing to share our Chipotle Copycat Salsa recipe.
Paired with our Chipotle Lime Rice recipe, you almost can’t tell you are dining at home!
INGREDIENTS
3-4 Tomatoes, diced
1/2 Red Onion, diced
1/4 Jalapeno, diced
5-7 stems of Cilantro
Juice of 1 Lime
1/4 tsp Kosher Salt
The directions are incredibly simple.
DIRECTIONS
Remove leaves from the cilantro stems and discard stems.
Chop up cilantro leaves.
Combine all ingredients and refrigerate for at least an hour to allow flavors to marry.
VOILA!
Now that you know “the secret”… I bet you’ll be having Burrito Bowls almost weekly.

That is a lovely salsa. It makes me think of warmer weather and sunny days outside by the grill. We love salsa and only have it homemade. It’s one of those foods that my husband just won’t have out of a jar.
