Gluten Free Chocolate Chip Cookies Recipe
The more I’ve read about gluten, the more I try to avoid it. Lately, though, my children have been giving me the “you’re neglecting us” look while peeking into the empty cookie jar with big sad puppy dog eyes. Thus began my search for a gluten free recipe that was as “clean” as possible, but still tasted yummy. I believe I found it first try! Beware, if this is your first time using coconut sugar as a brown sugar replacement it does give the cookies a slightly different texture. That being said, even my picky 16 year old son that has been fighting me tooth and nail on this clean eating trip loved these cookies.
This recipe was adapted from this one I found on Yummly
- 1 cup room temperature butter
- 2 cups brown rice flour
- ¼ cup potato starch
- 2 tbsp tapioca flour
- 1 tsp xanthan gum
- ¾ tsp sea salt
- 1 tsp baking soda
- ¼ cup honey
- 1 cup coconut sugar
- 2 eggs
- 2 tbsps milk
- 1½ tsp vanilla
- 1½ cups chocolate chips
- Preheat oven to 350 degrees
- Line cookie sheet with parchment paper
- Mix together dry ingredients
- In a separate bowl mix together butter, honey, eggs and vanilla
- Add the wet ingredients to the dry and mix until combined well.
- Add in chocolate chips
- Drop tablespoon sized balls on parchment paper about 2 inches apart
- Bake for 10-13 minutes
- Remove from oven and allow to cool on cookie sheet
