With fall here my cravings for anything pumpkin are in high gear. After a little searching and a flip of the coin, I picked this pumpkin soup recipe. I’ve adapted it a bit. The kids seemed to like it, but did not ask for seconds. The adults liked it much more… although I admit it didn’t taste as pumpkiny (is that a word?) as I’d had hoped. I paired it with homemade baguettes.

Pumpkin Soup

  • 6 cups chicken stock (we used Vegetable Broth)
  • 1½ teaspoons salt
  • 3½ cups cubed fresh pumpkin (we used 4 cans pumpkin puree)
  • 1 teaspoon fresh parsley
  • 1 cup chopped onion
  • 1 chopped red pepper
  • ¼ teaspoon dried thyme
  • dash of nutmeg
  • 2 clove garlic, minced
  • ½ cup heavy whipping cream (we used frozen whipped topping)
  • ½ teaspoon ground pepper

  2. If using fresh pumpkin: Cut pumpkin into ½-inch cubes.
  3. Heat stock, salt, pumpkin, onion, thyme, garlic, and peppercorns. Bring to a boil, reduce heat to low, and simmer for 30 minutes uncovered.
  4. Puree the soup in small batches (1 cup at a time) using a food processor or blender.
  5. Return to pan and bring to a boil again. Add the parsley and nutmeg. Reduce heat to low and simmer for another 30 minutes, uncovered. Stir in heavy cream. Pour into soup bowls and garnish with fresh parsley.

This baguette recipe is quick and simple. I made the dough in the bread machine and the final two steps as directed. This is adapted from “The Best Bread Machine Cookbook Ever,” by Madge Rosenberg

Homemade Crusty French Baguettes

Serves: 2 baguettes
Ingredients
  • 1-1/2 tsp. active dry yeast
  • 2-1/2 cups bread flour
  • 1 tsp. salt
  • 1 cup water
  • 1 Tbsp. cornmeal (added to baking sheet)
Instructions
  1. Add the yeast, bread flour, salt, and water in the order suggested by your bread machine manual and process on the DOUGH cycle. At the end of the DOUGH cycle, remove the dough from the bread machine and divide into 2 equal pieces. Form each piece into a round, pressing to break any air bubbles. Place the rounds on a lightly greased plate orcookie sheet, leaving room for the balls of dough to double in size.
  2. Cover with a clean bowl or kitchen towel and let rise about 20 minutes in a draft-free but not hot place. If your kitchen is chilly, the dough might need another 5 or 10 minutes to double in size. If you press the dough lightly with your finger and the mark remains, the dough is ready. If the indentation springs out again, the dough need to rise longer.
  3. Preheat oven to 375º F. Roll each ball of dough into a rope as long as the pan you are going to bake it in (cookie sheet, French bread mold, or any other long baking pan). Sprinkle the cornmeal on the pan and place the dough into the pan. (If you are using an open pan such as a cookie sheet, place the baguettes at least 4 inches apart to prevent their spreading together during rising.) Let rise again, covered, until double in
  4. size again--about 30 minutes.
  5. When the dough has doubled, spray or paint gently with cold water. (NOTE: Or leave a pan of water in the oven for the first 20 minutes of baking.) Slit the top diagonally several times with a sharp knife or single-edge razor. Bake 25 to 30 minutes, spraying with water once or twice more. (Disregard the spraying if you placed a pan of water into the oven for the first 20 minutes of baking.)

    Gosh, never heard of pumpkin soup. Love pumpkin rolls during the holidays. Not sure if I’d like this one or not to be honest. It sure looks different.

    This sounds so good. It reminds me of the time when my daughter was 10 and made a cooking video for school. She made squash soup and then served it to her class. The kids ate it, but only the teacher raved about ;>)

  14. Interesting recipe. I recently tried The Pioneer Woman’s pumpkin soup for the first time, I wasn’t super crazy about it like I thought I would be. The next time I have a baked pumpkin (perhaps for Thanksgiving..) I will give yours a try. It seems more zesty than TPW’s.

    I never thought about making Pumpkin Soup, but this looks like a really delicious and healthy soup! The soup does not look that hard to make, but the homemade bread looks like it would be a challenge for me! But all in all this is a delicious looking meal!
