My favorite no guilt treat in summer is watermelon. It’s not only delicious, but hydrating as well.
My family also craves ice cream when it’s hot outside.
What better way to have the best of both worlds then by combining them into a Watermelon Aqua Fresca Float?
This is super quick and easy and won’t detract from your lazy summer evening.
You will need:
- 4 cups cubed Seedless Watermelon
- 8 fresh Mint Leaves
- 2 cup Sparkling Water
- 2 tsp Lime Juice
- 1 tbsp Agave or Honey
- Vanilla Ice Cream
Place in watermelon in blender with lime, mint and agave or honey and run until pureed.
Add 1 cup of sparkling water to blender.
Place a several scoops of ice cream in each glass.
Pour watermelon mixture over ice cream to make float.
If it doesn’t foam up add a splash of sparkling water to create more fizz.
Enjoy!

This sounds really good. We love watermelon so I know the kids would love it. Ice cream, I don’t think they would complain. Plus I like that it actual has real fruit in it. Win Win situation.

This is like a combo of a milkshake and smoothie. Sounds refreshing especially with the mint. I never thought to mix that with watermelon.

Even with the ice cream ~ this sounds so refreshing (and obviously delicious! The mint and lime are wonderful additions ~ and I can’t to try making it with the AGAVE! Watermelon is such a quintessential American fruit ~ I think I’m going to be making this recipe both WITH and WITHOUT the Ice Cream. Already pinned it on two boards.
